Potato Skins
Servings: 4-6 skins / Prep Time: 10 min / Cook Time: 100 min
Ingredients
- 6 medium (3 pounds) russet potatoes
- Extra virgin olive oil
- Kosher salt
- Freshly ground pepper
- 6 slices bacon
- 4 ounces grated cheddar cheese
- 1/2 cup sour cream
- 2 green onions, thinly sliced
Directions
- Bake the potatoes
- Cook the bacon and crumble after cooking
- Cut potatoes in half horizontally. Scoop out the insides.
- Increase heat to 450°.
- Brush olive oil on skins, outside and in. Sprinkle with salt.
- Place on a baking rack in a roasting pan (don't use a cookie sheet, it will warp, use a roasting pan or broiler pan that can take the heat).
- Cook for 10 minutes on one side, then flip the skins over and cook for another 10 minutes. Remove from oven and let cool enough to handle.
- Arrange the potato skins, Fill with freshly pepper, cheddar cheese, and crumbled bacon.
- Broil for an additional 2 minutes, or until the cheese is bubbly.
- Top with sour cream and green onions to serve.
