Potato Skins


Servings: 4-6 skins / Prep Time: 10 min / Cook Time: 100 min

Ingredients

  • 6 medium (3 pounds) russet potatoes
  • Extra virgin olive oil
  • Kosher salt
  • Freshly ground pepper
  • 6 slices bacon
  • 4 ounces grated cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced

Directions

  • Bake the potatoes
  • Cook the bacon and crumble after cooking
  • Cut potatoes in half horizontally. Scoop out the insides.
  • Increase heat to 450°.
  • Brush olive oil on skins, outside and in. Sprinkle with salt.
  • Place on a baking rack in a roasting pan (don't use a cookie sheet, it will warp, use a roasting pan or broiler pan that can take the heat).
  • Cook for 10 minutes on one side, then flip the skins over and cook for another 10 minutes. Remove from oven and let cool enough to handle.
  • Arrange the potato skins, Fill with freshly pepper, cheddar cheese, and crumbled bacon.
  • Broil for an additional 2 minutes, or until the cheese is bubbly.
  • Top with sour cream and green onions to serve.
