Carrot Cake


Bake at: 325 degrees for 1 hr

Sift Together

  • 2 ½ cups cake flour
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt

Add

  • 2 cups sugar
  • 1 ½ cups oil
  • 4 eggs, one at a time
  • 1 cup crushed pineapple, juice and all
  • 2 cups shredded carrots, about 8 med carrots
  • 1 cup chopped nuts, optional

Instructions

  • Bake at 325 degrees for 1 hour in 9x13 pan

Cream Cheese Frosting

  • 3 cups powdered sugar
  • 1 8oz package of cream cheese
  • 1 stick butter
  • 1 tsp vanilla
  • Beat well and put on cooled cake
