Fried Chicken


Ingredients

  • 6 chicken drumsticks
  • 3 cups buttermilk
  • 2 tsp salt
  • 1 tsp pepper
  • Vegetable oil (for frying)

Dredging Mixture

  • 3 cups flour
  • 1/2 cup cornstarch
  • 1 tbsp salt
  • 1 tbsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp pepper
  • sprinkle of red pepper

Gravy

  • 1/4 cup flour
  • 1 cup milk
  • 1 cup water (or chicken stock)
  • a bit of salt pepper

Directions

Prep

  • Whisk together buttermilk, salt, pepper
  • Add chicken and cool in fridge or freezer if you procrastinated

Cooking

  • Heat oil to 350°
  • Take chicken from buttermilk mixture and coat in dredge
  • Fry for about 14 minutes or until 160° internal temp
  • Rest about 10 min on paper towels before serving

Gravy

  • Bring to low boil, stirring constantly until gravy is thick. Too far and gravy will clump.
  • Mix in any chicken giblets from the fryer
