Fried Chicken
Ingredients
- 6 chicken drumsticks
- 3 cups buttermilk
- 2 tsp salt
- 1 tsp pepper
- Vegetable oil (for frying)
Dredging Mixture
- 3 cups flour
- 1/2 cup cornstarch
- 1 tbsp salt
- 1 tbsp paprika
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp pepper
- sprinkle of red pepper
Gravy
- 1/4 cup flour
- 1 cup milk
- 1 cup water (or chicken stock)
- a bit of salt pepper
Directions
Prep
- Whisk together buttermilk, salt, pepper
- Add chicken and cool in fridge or freezer if you procrastinated
Cooking
- Heat oil to 350°
- Take chicken from buttermilk mixture and coat in dredge
- Fry for about 14 minutes or until 160° internal temp
- Rest about 10 min on paper towels before serving
Gravy
- Bring to low boil, stirring constantly until gravy is thick. Too far and gravy will clump.
- Mix in any chicken giblets from the fryer
