Veggie Burgers
Servings: About 8-10 patties
Ingredients
- 2 portabella mushrooms
- 1 beet
- 1 cup oats
- 1 can black beans
- 1 can chickpeas
- 8 oz lentils (about half bag)
- 1 Tbsp tapioca starch (aka tapioca flour)
- 2 Tbsp nutritional yeast
- 1 tsp marmite
- 2 drops liquid smoke
- Vegetable or olive oil
Directions
Prep
- Chop portabellas and fry in small amount of oil
- Boil lentils for about 10 min, until slightly tender.
- Peel beet and chop finely, set aside
Assembly
- Blend black beans, chickpeas, lentils, oats, and mushrooms in food processor. Mash by hand in big bowl works too.
- Mix in the beet, tapioca starch, nutritional yeast, marmite, and liquid smoke (pulse / mash).
- Form patties. They don't shrink so make them thin / burger-sized.
Cooking
- Coat pan with oil and fry patties on high heat until crust forms on both sides. Internal temp should be around 160°.
- Serve on brioche with standard burger fixins (lettuce, tomato, mayo, pickle, etc.), or don't, whatever.
